Welcome to my Empty Nest!
I’m Chris; head cook, novice photographer, and recipe creator. My husband and I live in along the shoreline of Lake Michigan and I’ve recently just retired. We’re busy 60-somethings who want – and need – to eat healthier.
One of the most important things you should know about me is that I’m totally obsessed with food. I always have been. I’m 100% Italian (‘nuff said) and I married an Irishman, a.k.a. Mr. Empty Nest, who is equally obsessed with food – although not always the “healthy” kind. (Scroll for more info.)
I spend a lot of time thinking about new food combinations and recipes. I have cookbooks and food magazines strewn all over my house – even in the bathroom. I am a Nutritionist with a Master’s degree. I keep up on current nutrition issues, food science, and food policy. I worked over 30 years as a Nutrition Specialist for a University and for 16 years at a community hospital. I LOVE TEACHING PEOPLE ABOUT FOOD AND HEALTH!
My food philosophy is to prepare healthy, great-tasting, easy-to-fix meals so my husband and I can get out of the kitchen and enjoy life. I am not obsessed with calories, carbs, or weight however, of my recipes can help you eat healthier and acheive a healthier body if that’s your goal.

Occasionally, on my blog you will hear from (or about) my one-of a-kind husband, Mr. Empty Nest.
Mr. EN I married in 1989 and, because of his absolute love of “all things food” my uber-Italian family instantly fell in love with him. Although we share the same level of passion for food and eating, Mr. EN’s passion is not always… “the healthy kind.” That’s what makes us a dynamo of a team! I often tweak recipes so that they appeal to him yet remain healthy overall. (It’s amazing what a handful of diced prosciutto, a tablespoon of Parmesan cheese, or a little red wine can do to lift his spirits and his appetite.)
