Blueberry Sun Salad

Packed with sun-kissed berries and mega-fresh salad greens you’ll love this deliciously easy summer salad.

On summer weekends, anything goes; that’s what I love about summer. You can go from a lazy Saturday afternoon walking the dog, drinking coffee, deadheading a few flowers, and reading a book on the deck to “Let’s have friends over for dinner,” in 10 seconds flat. Where we live, the weather had been spectacular this year and it’s absolutely perfect for al fresco dining. This Blueberry Sun Salad is just the ticket if you’re looking for a no-fuss side that’s seasonal, impressive, and bursting with cancer-fighting, antioxidant-packed, locally-grown fruits and veggies!

The tender sweet blueberries pair perfectly with the slightly bitter salad greens, tangy goat cheese, citrusy mandarin oranges, and crunchy-salty sunflower seeds. Finish it off with a drizzle of store-bought salad dressing, then grill up some chicken or fish,  pour yourself and your friends a  glass of Kim Crawford, and hey, you’ve got dinner!

Blueberry Sun Salad

Yield 4 servings

Packed with sun-kissed berries and mega-fresh salad greens you’ll love this deliciously easy summer salad.

Ingredients

  • 6 cups mixed salad greens (any kind will do)
  • 1 can mandarin oranges, drained
  • 2-3 tablespoons sunflower seeds
  • 1 ½ cups fresh blueberries, washed
  • ½ onion, thinly sliced
  • ¼ cup, crumbled goat cheese
  • A few tablespoons light poppy seed salad dressing

Instructions

  1. In a large salad bowl combine the salad greens, blueberries and sliced onion.
  2. Add 2 tablespoons salad dressing and gently combine until greens and berries are slightly coated.
  3. Gently stir in the mandarin oranges.
  4. Top with sunflower seeds, goat cheese, and more salad dressing as needed.
